Medome(Sealing,Seasoning)

Medome(Sealing,Seasoning) is the practice of sealing a new, porous piece before first use. Because unglazed high-fired ware (yakishime), Donabe clay pots, and pieces with crazing are absorbent, you boil the piece gently in rice-rinsing water or thin rice porridge and let it cool. The starch fills the fine pores of the clay, preventing water leakage, stains, and odor absorption — so the piece stays beautiful and lasts far longer. A simple first step that makes Japanese pottery ready for a lifetime of use.

FAQ about Medome

Q1. Which types of vessels require Medome(Sealing,Seasoning)?

Medome(Sealing,Seasoning) is essential for absorbent earthenware (pottery) rather than porcelain. It is specifically needed for brand-new pottery, vessels with kannyu (fine surface crazing), or unglazed pieces. Earthenware has microscopic pores that absorb oils, colors, and odors if left untreated, leading to stains or mold. Smooth porcelain and pre-sealed items do not require this process.

Q2. How do I actually perform "Medome(Sealing,Seasoning)" ? What can I use if I don't have rice water overseas?

Here is the standard step-by-step method:

  1. Prepare the pot: Place the vessel in a pot and submerge it completely in "rice washing water" or water mixed with starch. (Tip: Place a thin dishcloth at the bottom of the pot to prevent vessels from bumping against each other and cracking).

  2. Simmer: Bring to a boil over low heat, then simmer gently for 10–20 minutes.

  3. Cool and rinse: Turn off the heat and let the water cool down completely in the pot. Remove the vessel and rinse thoroughly with clean water.

  4. Dry: Allow it to air-dry completely in a well-ventilated area to prevent mold before storing.

If you don't have rice or rice water: You can easily substitute rice water with potato starch, cornstarch, or all-purpose flour. Simply dissolve about 1 to 2 tablespoons of starch per 1 liter (about 4 cups) of water. The main goal of medome is using starch molecules to clog the microscopic pores of the clay, so these pantry staples work just as effectively.
